Easter Cake Pops!

Remember those Oreo truffles we made? Well, these cake pops are very similar. Instead of using Oreos and cream cheese, you use box cake and frosting. We first came across these on Bakerella’s website. Hers look amazingly cute! We wanted to make these last Easter, but didn’t have time, so we knew we had to make them for this Easter! We will be giving these to our nieces and nephews for Easter as part of their Easter gifts! We know, we are such great Aunts! hehe

Here’s a look at the inside..

We love the versatility with these cake pops. You can use any box cake flavor and any store bought frosting. We decided to use strawberry box cake and store bought cream cheese frosting. This is probably the only time we will use boxed cake;-)You don’t even need a recipe to make them. All you have to do is make the cake according to the directions on the box. Once it’s  cooled, crumble the cake in a large bowl and mix it with about 3/4 of the 12oz, container of frosting. I think we used about 8 ounces. You don’t want the cake to get too sticky. You just need it to hold together enough to form the balls. We found it much easier to dip them after we froze them for an hour. After you freeze them, dip them into white almond bark or white chocolate. We always find it easier to work with almond bark.

These were very easy to make, minus the decorating, and tasted pretty darn good. If you don’t have time to decorate them, you could always color the almond bark different colors and make your cake pops look like real Easter eggs. We love how you get the flavor of a whole cake in each pop! Next time we want to try lemon cake with lemon icing.

Sarah - Love these!! I am sooo gonna make these for Easter now!! They are so cute! I’m thinking of doing what you did with Strawberry…do you think any other flavors would work besides lemon? lol And did you stick the handle part before or after dipping in almond bark??

Sarah, sorry we forgot to mention that part. We did put the sticks in before freezing them. You could really use any cake flavor, we’ve seen them done before with red velvet cake, yellow cake, and chocolate. Let us know if you have any other questions!
